Dim Sum at Home!! Oh boy, this dinner turned out so well. But I did cook for 5 hours yesterday. 😅 All dishes adapted from recipes in @thewoksoflife new cookbook. Swipe for more pics. 💕
Chicken Curry Puffs: Instead of using ground chicken, I marinated and baked chicken breast in a mix of soy, sugar, white pepper, sesame oil until done and juicy. I shredded it and then cooked it with garlic and two kinds of curry powder, cumin and turmeric, salt and white pepper, diced onion, splash of vinegar. Added cooked diced potato. And a bit of extra marinade and cornstarch slurry. This was so good. I could’ve just eaten it by itself. But instead I cut out squares of puff pastry and stuffed and folded them. Baked until puffed and golden brown. 😍
Scallion Pancakes: These came together quickly in the stand mixer (just flour, boiling water, and a little cold water), then kneaded for 5 minutes, divided into balls and let rest for an hour. Rolled each ball into a wide strip, oiled, salted, sprinkled scallion on top, then rolled into a tight tube and spiral like a snail. Rolled out into a 4-5 inch circle and pan fried in a cast iron pan. These were flaky and delicious.
Shrimp and Chive Dumplings: I made these while the scallion pancake dough was resting. Mixed shrimp and Chinese chives, sesame oil, Shaoxing wine, white pepper, soy sauce, a little sugar. I used wonton wrappers, stuffed, sealed, and steam pan-fried them.
Happy Family Lo Mein: Cooked @twinmarquisfoods lo mein noodles (superior to spaghetti for this dish, so get it if you can), rinsed with cold water, and oiled so the noodles didn’t stick together. Made a sauce of broth, soy, oyster sauce, sesame oil, Shaoxing wine. Stir-fried onion, garlic, ginger, celery, carrot, and broccoli in a wok. Added wok salt. Added leftover sliced chicken from the curry puffs, the noodles and sauce. Garnished with scallion. The best lo mein ever! Served it all with a chili soy dipping sauce.
