Make the custard by mixing milk, cream, and torn bread pieces (I don’t bother removing the crust here). Cover and set aside for 30 mins.

Mix garlic, eggs, cumin, salt and pepper, Parmesan and I usually add another cheese as well, like Gruyère, and a bit of Aleppo pepper, and mace or nutmeg. Add the bread mixture, fresh basil, and grated zucchini. Stir and place in a baking dish that has been heated in the oven and brushed with olive oil. Bake for 20 mins, add more cheese in top, bake for another 20-25 mins until golden brown.

I’ve found this keeps pretty well—longer than just one day which is what the recipe says. It is indeed light and fluffy—a delicious savory bread pudding!

Turmeric Fried Eggs with Tamarind Dressing 🍳 I’m not sure why it took me so long to make this, but I’m officially hooked! A flavorful, speedy weeknight meal that makes you feel special. Worked late and no hubby last night so it was a really lovely #dinnerforone. But it would make for a great brunch or dinner dish too. 🌸

Marinate shallot or red onion in lime juice and a little salt. Make a quick dressing of tamarind paste, fish sauce, lime juice, brown sugar, and I added a little date syrup too.

Fry eggs in olive oil and turmeric. Spoon the oil over the eggs while they cook. Instead of sautéing spinach which I’m out of, I just used fresh basil leaves to finish. Drizzle the dressing on top and oil from the eggs. I sprinkled a little Aleppo pepper on top instead of using fresh chili.

Cream Scones with Clotted Cream and Strawberry Jam 🍓 So tender and flaky, slightly sweet. These were just about perfect.

These come together (too?) fast. Mix flour, salt, baking powder, and sugar together. Cut in cold butter — I used a pastry cutter. I threw in a couple handfuls of raisins, but you could use currants.

Toss, then make a well and add a mix of cream and egg. Bring together first with a wooden spoon then your hands. Turn out and pat into an 8-inch circle. Cut into 8 wedges and place onto a parchment lined baking sheet. Brush with cream and sprinkle with turbinado sugar. Bake for 25 mins until golden. Heaven.

Dim Sum at Home!! Oh boy, this dinner turned out so well. But I did cook for 5 hours yesterday. 😅 All dishes adapted from recipes in @thewoksoflife new cookbook. Swipe for more pics. 💕

Chicken Curry Puffs: Instead of using ground chicken, I marinated and baked chicken breast in a mix of soy, sugar, white pepper, sesame oil until done and juicy. I shredded it and then cooked it with garlic and two kinds of curry powder, cumin and turmeric, salt and white pepper, diced onion, splash of vinegar. Added cooked diced potato. And a bit of extra marinade and cornstarch slurry. This was so good. I could’ve just eaten it by itself. But instead I cut out squares of puff pastry and stuffed and folded them. Baked until puffed and golden brown. 😍

Scallion Pancakes: These came together quickly in the stand mixer (just flour, boiling water, and a little cold water), then kneaded for 5 minutes, divided into balls and let rest for an hour. Rolled each ball into a wide strip, oiled, salted, sprinkled scallion on top, then rolled into a tight tube and spiral like a snail. Rolled out into a 4-5 inch circle and pan fried in a cast iron pan. These were flaky and delicious.

Shrimp and Chive Dumplings: I made these while the scallion pancake dough was resting. Mixed shrimp and Chinese chives, sesame oil, Shaoxing wine, white pepper, soy sauce, a little sugar. I used wonton wrappers, stuffed, sealed, and steam pan-fried them.

Happy Family Lo Mein: Cooked @twinmarquisfoods lo mein noodles (superior to spaghetti for this dish, so get it if you can), rinsed with cold water, and oiled so the noodles didn’t stick together. Made a sauce of broth, soy, oyster sauce, sesame oil, Shaoxing wine. Stir-fried onion, garlic, ginger, celery, carrot, and broccoli in a wok. Added wok salt. Added leftover sliced chicken from the curry puffs, the noodles and sauce. Garnished with scallion. The best lo mein ever! Served it all with a chili soy dipping sauce.

And no, I’m not cooking today. 😂😂

Romanian Apple Walnut Pie 💓 Another lovely, rustic, not too sweet treat from @irina.r.georgescu Tava cookbook!

The dough is a new one for me — clotted cream, crème fraiche, vanilla bean, and not much butter mixed together with a fork, then mixed again with flour and brought together by hand into a ball that rests for a half hour.

Grate apples then squeeze to get out the moisture, toss in sugar and lemon.

Cut the dough in half and roll out and fit into a baking tin. I used a slightly smaller pan than called for, so the dough went up the sides. Fork all over then add a layer of chopped walnuts and the apple. Shower sugar and cinnamon on top (I added extra!). Roll out the second ball of dough and fit on top. I crimped it all over and cut a couple slits in the top. Bake at 350F. I ended up going 20 minutes past the 45 minutes suggested in the recipe, again because my pan was a bit smaller.

Really enjoyed this. The pastry is rich and delicious. The apple really shines here and because it’s grated, you get a very concentrated flavor. Would work great with other fruit as long as you minimize the liquid. I can imagine using the dough in other ways. And now I’ve got extra clotted cream for scones! 😍

Coffee Cream Puff 💓 Good morning! 🌞 Here’s a wonderful little breakfast treat for you all the way from Romania!

Make a choux pastry (you may, like me, need assistance from your partner in really whisking the dough until shiny lol) and pipe onto a baking sheet. Ours were larger than the recipe called for, so I made fewer (😥) and cooked them a tad longer in the oven.

Once cooled, slice in half and fill with whipped cream sweetened with powdered sugar and flavored with vanilla bean paste and a whole lotta espresso powder.

Super delicious and light, slightly crispy. Strong coffee flavor. Will definitely make again! As you can see, we didn’t bother piping the filling. 😆 I made these last weekend and sure could go for one now!

It’s Taco Tuesday! 🎉 And I’ve got absolutely delectable Indian-inspired ones to share! Cauliflower Manchurian Tacos with Fried Halloumi Chickpea Mango Chaat Salad and Cashew Mint Lime Chutney — not your average taco. 😆

Spiced, roasted cauliflower is cooled then battered in rice and chickpea flours, a bit of cornstarch, and spices for an extra crunchy crust and fried until crisp. I lightly tossed it with a spicy sweet sauce of ketchup, fresh squeezed OJ, soy sauce, sambal olek, mirin, and garam masala. This is such a fun Indian-Chinese dish! I have eaten it many times in restaurants but never made it at home. Made such a good taco filling.

For a topping/side salad, I made a fresh mango, red onion, chickpea, cucumber chaat with a cashew, mint, lime chutney and halloumi fried in a bit of ghee and maple syrup and dusted with chaat masala. Totally addictive and a fab alternative to salsa.

I actually meant to serve this with naan, but I only had corn tortillas and no time to make flatbread. Necessity is the motherhood of invention and all that. 😅

Always put an initial layer of cheese to prevent soggy bottom. And use a baking stone—the result will be superior. Served with Calabrian chile hot honey. The perfect weekend meal made even more satisfying when you make it from scratch! You get more servings too. 😀 Now on to the first race of the season!! 🏎️

Bombay Benedict 💓 Perfect weekend brunch dish — you can even make most of it ahead!

This Indian spin on eggs Benedict really is so delicious. We kept saying mmm this is so good in between bites. 😆 Basically make pav bhaji on the stove — cook down assorted veg in garlic, ginger, cumin, coriander, and fennel seed, and I added @pinchspicemarket garam masala too, in a lot of butter or ghee. I used what I had veg-wise—mostly potato, onion, kale. I even threw in leftover ratatouille so this was a #leftovermakeover! 💪 Cook down in a bit of water so the veg gets soft and the liquid disappears.

Add tomato, chili powder (I recommend Kashmiri), cinnamon, cardamom, salt and pepper, and instead of peas, I used leftover canned chickpeas. I also added s scoop of coriander herb chutney I had made for something else. Cook down a bit more. Taste and set aside for flavors to meld. This veg can be made ahead and will taste even better on day 2!

While that’s going, make a quick sauce—heat mayo, chopped Indian pickle (I used the liquid and smallest bits to skip using the food processor), cream and pinch of salt and set aside. I loved the flavor of this—rich and tangy.

Butter thick slices of brioche and pan-fry on both sides. Top with the veg, a fried egg, the sauce, and a dash of chaat masala if you have it. Enjoy!! ❤️

Blueberry Muffin Cake!! 💙 It’s a snow day! ❄️ Perfect reason to make this really delicious cake from @zoebakes. Not does it have a tight almondy crumb and blueberry pecan cinnamon sugar crumble topping, but it is super easy peasy to make. Literally just blitz all of the cake ingredients in the food processor, top with berries, and bake for 45 mins. Add the nut crumble topping and bake another 25 mins and you’re done! Works well with frozen berries, so great for the Wintertime.

The cake has 3 different flours—AP, almond, and whole wheat which makes for a lovely, unique cake. Definitely don’t skip using all three flours. Plus, it’s not too sweet, so have that second slice! 🤩🤩

Ras El Hanout Salmon, Red Onion, and Goat Cheese Quiche 💓

Adapted from an old @smittenkitchen recipe, I use @marthastewart48 pate brisée which makes a double so I usually have one in the freezer, and whatever leftover veg/meat/ seafood/cheese I have about.

Tonight, I had leftover pan seared ras el hanout salmon which we forked apart, goat cheese, half a red onion, a bit of Parmesan and Gouda. Mixed with a bit of cream and 3 eggs. Poured into a parbaked pie shell, brushed with Dijon to help give flavor and prevent soggy bottom and baked until puffed and golden brown. A really lovely weeknight meal if you have the dough already made. 🥧

Marcella, a gorgeous heirloom cannellini bean from @rancho_gordo, and garlic-infused olive oil are used in three different preparations here: a basic bean mash, a thick aioli, and a dressed whole bean topping with rosemary, thyme, and Aleppo. The result is rich with different textures. Super duper. (Not quick to prepare though worth it!)
